Ingredients:

  • 1 Bottle of Real Bacon Bits
  • 8 Medium Tomatoes
  • 1 Can (8oz.) Whole Kernel Corn
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Garlic Powder or Garlic Salt
  • 1 Teaspoon Butter
  • ½ Onion; Finely Chopped
  • 1Cup Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1 Box Melba Toast

 

Directions:

1) Finely chop your onion and put into a microwaveable safe bowl.  Melt butter with a pinch of pepper on top of the onion pieces in the microwave.  On high heat, cook the onion for 3 minutes or until desired texture is achieved.
2) Cut the top off the tomatoes and place the top to the side.  Scoop out the inside of the tomatoes and place into a large mixing bowl.
3) In you large bowl combine; Insides of tomatoes, salt, pepper, cooked onion, garlic powder, bacon bits, corn and cheeses (leave a little of the preferred cheese to the side for each tomato). Stir until completely mixed.
4) With a tablespoon, stuff the tomato shells with the corn mixture until full.  Then sprinkle the leftover cheese on top of the stuffed tomatoes and place the tops back on the tomatoes.
5) At 325-350 degrees F, cook for 15-20 minutes.
