Pink Salmon Croquettes:

Items needed:

  • 1 can of pink salmon
  • 1 egg
  • Plain flour
  • “Pinch” of salt and pepper

 

Directions:

  1. Beat egg in a bowl with salt, pepper, and salmon
  2. Add enough flour until it is not wet, but not dry
  3. Heat a small amount of oil in a pan (1/4 inch)
  4. Place a large spoonful of the mixture in skillet
  5. Press flat with a spatula (spray spatula with non-stick spray or coat it with oil)
  6. Brown each side (may take up to 5 minutes cooking time)
