Red Beans & Rice

Items needed:

  • 2 tbsp oil
  • 1 medium onion, chopped
  • 3 cans (15 1/2 oz each) red beans, drained, rinsed
  • 2 cans (14 1/2 oz each) chicken broth
  • 1/2 lb smoked sausage, cooked, cubed (We like to use more, you can never have too much sausage!)
  • 1 cup of water
  • 1 tsp crushed red pepper
  • 1/2 tsp ground red pepper (cayenne)
  • 2 1/2 cups Minute Premium white rice, uncooked

Directions:

  1. Heat oil in medium saucepan
  2. Add onion, then cook and stir 3 minutes or until crisp/tender
  3. Add beans, broth, sausage, water and seasonings
  4. Mix well and bring to boil
  5. Stir in rice
  6. Cover and reduce heat to medium-low
  7. Allow to simmer 10 minutes or until rice is tender. Stir.
