Items needed: |
- 2 tbsp oil
- 1 medium onion, chopped
- 3 cans (15 1/2 oz each) red beans, drained, rinsed
- 2 cans (14 1/2 oz each) chicken broth
- 1/2 lb smoked sausage, cooked, cubed (We like to use more, you can never have too much sausage!)
- 1 cup of water
- 1 tsp crushed red pepper
- 1/2 tsp ground red pepper (cayenne)
- 2 1/2 cups Minute Premium white rice, uncooked

Directions:
- Heat oil in medium saucepan
- Add onion, then cook and stir 3 minutes or until crisp/tender
- Add beans, broth, sausage, water and seasonings
- Mix well and bring to boil
- Stir in rice
- Cover and reduce heat to medium-low
- Allow to simmer 10 minutes or until rice is tender. Stir.
