Ingredients:
- 1 Tablespoon Vegetable Oil
- 1 Boneless Pork Roast
- Pinch of Salt and Pepper
- 4 Sweet Potatoes, Quartered
- 1 Onion, Quartered
- 6 Cloves Garlic
- 1 ( 14.5 ounce) Can Chicken Broth
Directions:
- Heat oil in a large skillet, season meat with salt and pepper, and brown in the oil.
- Preheat oven to 225 degrees F. Layer the Dutch Oven with the sweet potatoes, onion and garlic. Place browned roast on top of the vegetables and pour in chicken broth.
- Cover and place in the oven and cook for 4 to 6 hours.
