Ingredients:
- 7 LB. Fresh Pork Butt Roast
- 2 Tablespoons New Mexico Chili Powder
- 4 Tablespoons Brown Sugar
Directions:
- Preheat smoker to 200 to 225 degrees F.
- In a small bowl, combine the chili powder and brown sugar and any other seasonings to your taste. Apply to the meat and rub it in with your fingers. Place a roasting rack in a dip pan and lay the meat on the rack.
- Smoke for 6 to 18 hours until internal temperature of the pork reaches 160 degrees F.
