Items needed: |
- 1/2 cup Creole or yellow mustard
- 1qt oil for frying
- 4 cups corn meal
- 6 mini ears of corn, fresh or frozen
- 1 teaspoon salt
- 1 teaspoon pepper

Directions:
- Heat oil to 400 F
- Roll corn in mustard until coated
- In a separate bowl mix corn meal with salt and pepper until blended
- Roll coated corn in the dry mix until completely coated around the kernels and sides
- Fry in hot oil until coating is golden brown
- Drain on paper towels
