- 4 large catfish fillets
- 1 cup milk
- 2 cups yellow corn meal
- 1 tablespoon salt
- 1 teaspoon pepper
- 1/2 teaspoon cayenne pepper
- Oil

Directions:
- Fill skillet with oil to 1/2 inch deep and heat on medium high until hot
- Cut fillets into 2 inch strips and set aside
- In a plastic bag, mix cornmeal, salt, pepper, and cayenne
- Dip each strip in milk and place in bag
- Seal bag and shake until all strips are well coated
- Take strips out and fry about 5-6 minutes or until golden brown
- Drain on paper towels
