Fried Catfish Fingers:

Items needed:

  • 4 large catfish fillets
  • 1 cup milk
  • 2 cups yellow corn meal
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • Oil

 

Directions:

  1. Fill skillet with oil to 1/2 inch deep and heat on medium high until hot
  2. Cut fillets into 2 inch strips and set aside
  3. In a plastic bag, mix cornmeal, salt, pepper, and cayenne
  4. Dip each strip in milk and place in bag
  5. Seal bag and shake until all strips are well coated
  6. Take strips out and fry about 5-6 minutes or until golden brown
  7. Drain on paper towels
