Items needed: |
- 1 lb small mushrooms
- 1 egg
- 2 cups all purpose flour
- 1 cup corn meal
- 3/4 cup milk
- 1 teaspoon salt
- 1 tablespoon Creole mustard (prepared mustard may be used)
- 1 teaspoon white pepper
- 1/2 teaspoon cayenne or red pepper

Directions:
- Mix flour, corn meal, salt, white pepper, and cayenne in a bowl
- In another bowl blend egg, milk and mustard
- Add 1/4 cup of dry mixture to egg mixture (whisk until blended completely)
- Heat oil to 350 F
- When oil is hot, dip mushroom into egg mixture, then into dry mixture
- Shake off excess and fry until golden brown
- Allow to drain briefly on paper towels
