Fried Mushrooms:

Items needed:

  • 1 lb small mushrooms
  • 1 egg
  • 2 cups all purpose flour
  • 1 cup corn meal
  • 3/4 cup milk
  • 1 teaspoon salt
  • 1 tablespoon Creole mustard (prepared mustard may be used)
  • 1 teaspoon white pepper
  • 1/2 teaspoon cayenne or red pepper

Directions:

  1. Mix flour, corn meal, salt, white pepper, and cayenne in a bowl
  2. In another bowl blend egg, milk and mustard
  3. Add 1/4 cup of dry mixture to egg mixture (whisk until blended completely)
  4. Heat oil to 350 F
  5. When oil is hot, dip mushroom into egg mixture, then into dry mixture
  6. Shake off excess and fry until golden brown
  7. Allow to drain briefly on paper towels
