Fish Gumbo:

Bayou Classic

Items needed:

  • 4 slices bacon
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 teaspoon fresh minced garlic
  • 1 16oz. can tomatoes (drained/diced)
  • 1 can tomato soup
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp chopped parsley
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp black pepper
  • 1 cup water
  • 1/2 tsp hot sauce
  • 1 10oz. package frozen cut okra
  • 1 pound fish fillets (catfish)

Directions:

  1. Fry bacon in skillet until crisp
  2. Remove bacon and cook (in bacon drippings) onions, peppers, and garlic
  3. Stir until tender
  4. Crumble bacon, cut fish into 1 inch pieces
  5. Hold the bacon and fish for last
  6. Add remaining ingredients to stockpot
  7. Add cooked vegetables
  8. Heat on medium heat and simmer until vegetables are very tender
  9. Add fish and bacon
  10. Cover and simmer 15 minutes
  11. Add more water as needed
