Items needed: |
- 4 slices bacon
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 teaspoon fresh minced garlic
- 1 16oz. can tomatoes (drained/diced)
- 1 can tomato soup
- 2 tbsp chopped fresh parsley
- 1/2 tsp chopped parsley
- 1/2 tsp dried thyme leaves
- 1/2 tsp black pepper
- 1 cup water
- 1/2 tsp hot sauce
- 1 10oz. package frozen cut okra
- 1 pound fish fillets (catfish)

Directions:
- Fry bacon in skillet until crisp
- Remove bacon and cook (in bacon drippings) onions, peppers, and garlic
- Stir until tender
- Crumble bacon, cut fish into 1 inch pieces
- Hold the bacon and fish for last
- Add remaining ingredients to stockpot
- Add cooked vegetables
- Heat on medium heat and simmer until vegetables are very tender
- Add fish and bacon
- Cover and simmer 15 minutes
- Add more water as needed
