- 1 large chicken
- 1 1/2 spicy sausage
- 3 stalks celery, cut into large pieces
- 1 tbsp seasoning salt
- 1 tbsp black pepper
- 2 cups uncooked white rice
- 3 hard boiled eggs, finely chopped
- 1 tbsp poultry seasoning

Directions:
- Place chicken in stock pot
- Pour in enough water to cover 3/4 of the chicken
- Add crumbled sausage, celery, and seasonings to pot and boil until the chicken is done
- Remove chicken and celery; discard celery
- When the chicken cools, de-bone and chop into small pieces
- Place chicken meat back into pot along with rice and eggs
- Bring to a boil
- Reduce heat and simmer for about 20 minutes or until rice is done
- Remove from heat and let soak for 10-15 minutes.
