Items needed:

 

  • 1 large chicken
  • 1 1/2 spicy sausage
  • 3 stalks celery, cut into large pieces
  • 1 tbsp seasoning salt
  • 1 tbsp black pepper
  • 2 cups uncooked white rice
  • 3 hard boiled eggs, finely chopped
  • 1 tbsp poultry seasoning

 

Directions:

  1. Place chicken in stock pot
  2. Pour in enough water to cover 3/4 of the chicken
  3. Add crumbled sausage, celery, and seasonings to pot and boil until the chicken is done
  4. Remove chicken and celery; discard celery
  5. When the chicken cools, de-bone and chop into small pieces
  6. Place chicken meat back into pot along with rice and eggs
  7. Bring to a boil
  8. Reduce heat and simmer for about 20 minutes or until rice is done
  9. Remove from heat and let soak for 10-15 minutes.
